Job Description:
Responsibilities:
- Cut, trim, and otherwise prepare standard cuts of meat, poultry, fish and shellfish
- Shape, lace and tie roasts and other meats, poultry or fish and may wrap prepared meats, poultry, fish and shellfish
- Strive to be innovative, creative and dynamic at all times, with a positive attitude
- Ensure departmental standards and Food & Beverage core standard are followed
- Ensure high standards of productivity, quality and consistency
- Daily food requisition & par stock to be organized, supervised, and monitored with leaders
- Effective control on food wastage by creation of table d hote, portion control, labor cost and productivity
- Effective leader who will drive this team to success by communication in meetings, ongoing training with employees, apprentice demonstration, standardized recipes, and maintenance of training manuals
- Apply & follow all policies & procedure established in the hotel & kitchen department
- Observe a high standard of cleanliness at all times in the kitchen, respect to established regulation on health & safety procedures, and commitment to working in a safe environment
- Will actively participate on managing administrative tasks for department
- Actively participates with the Kitchen on hotel wide goals
Qualifications:
- Inter Provincial Red Seal or Butcher Journeymen Paper
- 8 to10 years experience in the butchery trade with culinary experience
- Must have good knowledge of fish cutting, sausage & pate making
- Possess strong leadership, organization & communication skills
- Works well with others, demonstrates a good team spirit with an open mind
- Passion to work in a high volume kitchen
- Self motivated and not discouraged by repetitive tasks
